Jasser’s Concord Grape & Rosemary Sorbet

You can make sorbet out of virtually any fruit and one of our favourite versions is with concord grapes. This version incorporates rosemary also. These grapes are usually in season for the first two weeks of September and the best source is direct from the Okanagon Valley. We love to get these grapes from Steve & Dan’s Fruit stands at farmer’s markets all over Alberta.

INGREDIENTS

2 bunches of fresh Concord Grapes (washed, skin on, stems removed, ignore the seeds)

1 tsp ground rosemary

1/2 cup water

1/4 cup sugar

2 tbsp fresh lemon juice

Zest from one lemon

  1. Blend the grapes until formed into a puree, stain and set aside

  2. In a small saucepan, heat the water, sugar, rosemary, lemon juice and zest until the sugar has dissolved. This syrup will be what sweetens your sorbet.

  3. Strain the syrup and allow it to cool completely.

  4. You should now have two bowls, one with your syrup and the other with your fruit puree. Determining how much syrup to add to the puree will depend on the egg test method (see video below)

  5. Add the puree and syrup mixture to your ice cream maker and follow manufacturer directions.
