Dandelion Fritters
Ingredients
1 cup flour
1 teaspoon baking powder
Salt & Pepper to taste
1 egg (use half a bottle of beer or water if you cannot eat eggs)
2 cups dandelion flowers
An inch of olive oil in a heavy bottomed pan
Directions
Toss dandelions in beaten eggs.
Mix flour with salt & pepper & baking powder. Use other herbs as desired (basil, oregano, tarragon for example).
Remove blossom heads from eggs and toss to coat in flour and fry in hot oil in a frying pan until golden brown.
Serve with your favourite dipping sauce. A tzatziki yogurt dressing with garlic & mint works great. Alternatively, my favourite is to drizzle with a flavoured olive oil.
