Dandelion Fritters

Ingredients

  • 1 cup flour

  • 1 teaspoon baking powder

  • Salt & Pepper to taste

  • 1 egg (use half a bottle of beer or water if you cannot eat eggs)

  • 2 cups dandelion flowers

  • An inch of olive oil in a heavy bottomed pan

Directions

  1. Toss dandelions in beaten eggs.

  2. Mix flour with salt & pepper & baking powder. Use other herbs as desired (basil, oregano, tarragon for example).

  3. Remove blossom heads from eggs and toss to coat in flour and fry in hot oil in a frying pan until golden brown.

  4. Serve with your favourite dipping sauce. A tzatziki yogurt dressing with garlic & mint works great. Alternatively, my favourite is to drizzle with a flavoured olive oil.
