Grilled Pineapple Salsa

When canned pineapple just won’t do!

Ingredients

1/2 of one ripe pineapple, peeled, cored, and thinly sliced into rings.

1/4 cup avocado oil (or fruity olive oil)

1-2 tablespoons maple sugar

2 serrano peppers

1/4 cup finely chopped sweet red peppers

1 fresh lime, juiced

2-4 tablespoons chopped cilantro (al gusto)

Directions

Slice the pineapple into thin rings. Place on cookie sheet and brush with oil and sprinkle half the maple sugar on top. Place in oven on broil setting. Broil until the pineapple has caramelized edges. Flip the pineapple rings over and repeat with the rest of the oil and maple sugar. Take out of oven and let cool.

Chop the pineapple into small pieces and toss with the rest of the ingredients. Taste and adjust the seasonings to your likeness adding more lime and chilies al gusto.

Serve with fish, grilled chicken, or pork. Our favourite way of serving is in fresh tacos. It also pairs well with grilled shrimp and coconut rice.
