Prairie Berry Salad
Ingredients
3 cups mixed baby salad greens
1 cup chopped romaine
1 cup fresh Saskatoons
1 chopped green onion
¼ cup feta cheese
1 small cucumber, sliced
Dressing
2 tablespoons balsamic vinegar
1 teaspoon sugar
2 tablespoons Greek fruity olive oil
1 tablespoon slivered almonds, lightly toasted
1 garlic clove, finely minced
Salt and pepper to taste
Pomegranate molasses for serving
Directions
Mix the dressing ingredients in a salad bowl and whisk briskly.
Add the salad ingredients and gently toss with dressing to coat.
Sprinkle with toasted almonds and drizzle with pomegranate molasses.
Note: Adding a sliced, grilled chicken breast nicely completes this to a full meal.
