Saskatoon Berry BBQ Sauce

Ingredients

  • 2 Cups Saskatoon Berries Rinsed

  • 1 Cup apple juice or white grape juice

  • 5 Tbsp white sugar

  • 5 Tbsp raw honey (or maple or birch syrup)

  • 1/2 Cup white wine vinegar

  • 1/2 Tbsp black pepper freshly ground

  • 1/2 minced onion

  • 2-3 garlic cloves, minced

  • 1/2 Tbsp Mustard (Dijon or other whole grain mustard)

  • 1 Tbsp Worcestershire sauce

  • 3 Tbsp olive oil

  • Salt & Pepper to taste

Directions

  1. Place olive oil in frying pan. Add minced onions. Fry until golden.

  2. Add saskatoons, garlic, and fry for a few minutes before adding the rest of the ingredients. Cook until the berries have burst and the sauce has reduced slightly.

  3. Add ingredients into Vitamix or a high powered blender. Blend on high. Pour back into frying pan and adjust seasonings to taste.

  4. Wait for the sauce to cool before storing in a clean and sterilised resealable bottle.

Notes: you can use any vinegar you like as a substitute.

Goes beautifully with duck, pork, or game meats like venison.
