Saskatoon Berry Pie Filling for pie

Ingredients

4 cups Saskatoon Berries (fresh)

1/4 cup water

2 tablespoons lemon juice

3/4 cup white sugar

3 tablespoons tapioca

9 inches double crust

1 tablespoon butter

  1. Preheat oven to 450 F.

  2. In a roaster mix all the ingredients well and cook, stirring occasionally, for 2.5 hours. The berries should be soft and hold form but not mushy when they are done.

  3. Scoop hot pie filling into mason jars and screw lid on hand tight while hot. The lids should pop when they seal from the heat. Don't allow the pie filling to cool before putting into jars or they may not seal properly.

  4. Place one jar into an 8" pie pastry shell. You can also cover with pie pastry, be sure to vent the middle by pricking with a fork.

  5. I like to add a scoop of vanilla ice cream while pie is still hot for a delicious melting Pie à la Mode.
