Sourdough-Parmesan Bread with Cracked Black Pepper

1 C sourdough starter

1/2 C water

2 tablespoons olive oil

2.5 C organic white flour

1/2 C organic wheat flour (we use Park Wheat from Gold Forest Grains)

1/2 C grated parmesan cheese

1 tsp sea salt

Place all ingredients in a bread maker on the dough setting.

When dough is ready, shape and place in baking vessel of choice. We use clay loaf pans. Score top of loaf.

Place pan in fermentation station; or in warmed oven turned off with light on and cake pan filled with water in base.

Let rise until doubled in bulk. When it’s ready for baking, place in preheated oven at 350 for 40-50 minutes or until golden on top and with a hollow sound when tapped.

Serve with rustic minestrone style soup and/or Cesar Salad and a glass of house mead of course!
