Spring Chicken Salad with honey-lime dressing

Honey-lime dressing

1/4 cup raw honey

1/4 fresh lime juice (do not substitute bottled juice)

2 tbsp fresh mint leaves

Fresh cracked red peppercorns - a few twists of the mill al gusto

Place ingredients in a blender or magic bullet and whip until well blended. Place in refrigerator for 30 mins to allow the flavours to meld while you put the salad together.

Salad ingredients

1-2 cups of leftover chicken from a roast, or 2 chicken breasts diced

1/2-3/4 cup mandarine orange

5-6 cups of spinach or mixed mesculin salad greens of choice

1/2 red onion sliced super finely sliced

1/4 cup slivered parmesan cheese

Croutons (optional)

Directions

Wash salad greens and place in salad spinner to dry. Add to pretty salad bowl and toss in the rest of the ingredients. Toss well.

Drizzle salad dressing over the ingredients while tossing. Place on serving plates and serve immediately.
