Café de Olla (French Press Method)
Ingredients
8 cups water
5–8 oz piloncillo (or to taste)
1-2 cinnamon sticks, broken up
3 whole cloves
1 star anise
8 tablespoons freshly ground coffee
Method
Bring the water, piloncillo, cinnamon sticks, cloves, and star anise to a gentle boil.
Reduce heat and simmer for 10 minutes to infuse the spices and dissolve the piloncillo.
Remove from heat and add the coffee grounds.
Let steep for 6 minutes.
Pour the mixture carefully into a large French press and press slowly.
Serve hot.

For a richer, deeper flavor, let the spices simmer a few extra minutes before adding the coffee. The piloncillo adds a warm caramel note that pairs beautifully with the cinnamon and star anise.
