Café de Olla (French Press Method)

Ingredients

  • 8 cups water

  • 5–8 oz piloncillo (or to taste)

  • 1-2 cinnamon sticks, broken up

  • 3 whole cloves

  • 1 star anise

  • 8 tablespoons freshly ground coffee

Method

  1. Bring the water, piloncillo, cinnamon sticks, cloves, and star anise to a gentle boil.

  2. Reduce heat and simmer for 10 minutes to infuse the spices and dissolve the piloncillo.

  3. Remove from heat and add the coffee grounds.

  4. Let steep for 6 minutes.

  5. Pour the mixture carefully into a large French press and press slowly.

  6. Serve hot.

Kristeva’s Note:
For a richer, deeper flavor, let the spices simmer a few extra minutes before adding the coffee. The piloncillo adds a warm caramel note that pairs beautifully with the cinnamon and star anise.
