Chive Scented Ricotta

This is an amazingly simple but elegant recipe. And, gives you another thing to do with that wonderful fresh ricotta cheese you made and want to showcase!

INGREDIENTS

2 cups fresh ricotta (obviously store-bought will do in a pinch)

2 tablespoons of your favourite olive oil

Himalayan pink salt, or your favourite salt of choice. The options truly are endless.

1/4 cup finely chopped chives (garlic chives is another favourite option!)

20 slices of your favourite bread made into crostini

DIRECTIONS

Mix the ricotta, olive oil, salt & pepper to taste, and add the chives. Set aside. Brush the bread with your lovely olive oil and toast in the oven under the broiler until toasty and golden and the olive oil is sizzling.

Remove from oven. Dollop some of the ricotta on each slice and garnish with cracked pepper and a few chive blossoms.
