Dukkah - Your new favourite spice blend

Dukkah is your new favourite spice blend. It originates from Egypt and Northern Africa and it’s often served with fresh bread, Dukkah is a must on your next mezza platter. This spice blend can be sprinkled onto feta cheese, ful medames, or on top of roasted olives or even as a simple dip with fresh pita bread and olive oil.

INGREDIENTs

  • 2/3 Cup Hazlenuts

  • 1/2 Cup Sesame Seeds

  • 2 Tbsp Corriander Seeds

  • 2 Tbsp Cumin Seeds

  • 1 Tbsp Freshly Ground Black Pepper

  • 1 Tbsp Sea Salt

Toast the hazelnuts on a baking sheet at 350f until fragrant. Remove and place them on a clean tea towel. Cover them with a second tea towel. While the hazelnuts are still hot rub them between the towels to remove their skins. After that, let them cool completely and crush in a food processor to the consistency of coarse sand.

In a dry skillet toast the sesame seeds until golden brown, set aside. In the same skillet toast the cumin and coriander seeds until they begin to pop.

Place all the cumin and coriander in a spice grinder and grind to a fine powder. Stir with sesame seeds, crushed hazelnuts and the remaining ingredients.

Store in a jar at room temperature indefinitely.
