Kristeva's Favourite Ginger Molasses Cookies

INGREDIENTS

3/4 C butter

1 C brown sugar

1 egg

1/4 C blackstrap molasses (or fancy if you prefer)

2 1/2 C AP flour

1 tsp salt

2 tsp baking soda

1/2 tsp freshly ground cloves (grind in mortar and pestle)

1 tsp ground cinnamon

2” piece of fresh ginger, grated

DIRECTIONS

  1. Cream together butter and brown sugar

  2. Stir in egg and molasses; mix well

  3. Fold in sifted dry ingredients

  4. Chill covered for 60-90 min

  5. preheat oven to 350F

  6. Roll dough into small balls (or use melon baller)

  7. Roll each ball in white sugar

  8. Place on lightly greased cookie sheet (or one covered with parchment paper)

  9. Lightly press each ball with a fork

  10. Bake 9-10 minutes and remove tray from oven and leave cookies on tray for 2-3 minutes before transferring to a wire rack for cooling.
