Pancit is served at birthdays and milestones to symbolize long life. The noodles represent continuity — life stretching forward without being cut short.
This dish moves quickly but carries meaning. It’s flexible, forgiving, and shaped by what’s available — a reflection of everyday Filipino resilience.
Ingredients
250 g pancit canton noodles
200 g chicken breast, sliced
150 g shrimp, peeled
1 carrot, julienned
1 cup cabbage, sliced
1 onion, sliced
3 cloves garlic, minced
3 tbsp soy sauce
1 tbsp oyster sauce
2 cups chicken broth
Oil for sautéing
Calamansi or lemon wedges
Directions
Sauté garlic and onion until fragrant.
Add chicken and cook until lightly browned.
Add shrimp and cook just until pink.
Add vegetables and toss briefly.
Pour in broth, soy sauce, and oyster sauce.
Add noodles and gently mix until liquid is absorbed.
Cook until noodles are tender but never mushy.
Serve hot with calamansi squeezed on top.
Tip: Pancit should be moist, glossy, and generous — never dry.
