Peanut Butter Melting Moments
Ingredients
1 cup all-purpose flour
½ cup cornstarch
½ cup confectioners' sugar
1/2 cup butter
1/4 cup peanut butter
Pinch of sea salt
Directions
Step 1: Cream butter & peanut butter until fluffy. Mix dry ingredients and add to butter mixture and beat thoroughly.
Step 2: Place dough onto parchment paper and roll into a log. Place in refrigerator for one hour.
Step 3: Meanwhile preheat oven to 300 degrees F (150 degrees C).
Step 4: Slice 1/2” pieces from log and shape dough into 1 inch balls. Place about 1 1/2 inches apart on ungreased cookie sheets. Flatten with lightly floured fork. Bake for about 20 minutes or until edges are just lightly browned. Don't overbake!
Step 5 (optional): Spread cookies with a layer of icing between two cookies to for a yo-yo type cookie.
Optional Icing
3 tbsp butter
2 tbsp peanut butter
1/2 cup icing sugar
Blend ingredients until smooth.
