One of the most impressive features of this elegant wine is its complexity. Emiliana Coyam Organic wine is a fantastic red blend of nine different biodynamically grown grapes the result of which is a fantastic expression of the vineyard’s terrior.
The blend is made up of nine different grape varieties, including Syrah and Carmenère, with the rest, Cabernet Sauvignon, Mourvèdre, Carignan, Malbec, Garnacha, Tempranillo, Mourvedre, and Petit Verdot. And, is unfiltered and aged for 13 months in 80% French and 20% American oak barrels. Each grape contributes its own unique flavour profile to the wine, resulting in a layered and multi-dimensional taste experience.
On the nose, Emiliana Coyam offers a bouquet of dark fruit, blackberries, and ripe plum, with hints of cocoa and vanilla. On the palate, the wine is full-bodied, with a velvety texture and soft flavours of black cherry, blackberry, and cassis, combined with notes of earthy florals and white-pepper spice. The tannins are well-structured and provide a smooth and lingering finish.
While the acidity is balanced, the overall impression is a bit flat and uninteresting at first taste. That is, until you pair it with food. This wine is MADE to be enjoyed with food. The flavours of dark spice and fleshy ripe black fruit really pop when paired with creamy cheese like a brie or camembert. Also, it is delicious when paired with high quality grilled meats.
