FIELD TO FEAST

The humble dandelion should hold a place of distinction in North American history and yet sadly most regard it as nothing more than a pest. What was once a plant that was highly regarded as staple in early colonial life has become the bane of every gardener. I set out to turn the tables on this notion and bring this humble little plant back to its revered place in our kitchens.

The course is a fun morning exploring the wild foods of the region surrounding Dirty Bear Ranch. We start with an infor­ma­tive talk over a wild harvested tea before heading out in the field where we will identify various wild edibles while on the hunt for dandelions.

You will learn how to make a delicious fresh cordial as well as a savoury tapas-style fritter. This tasty treat is not only a healthy addition to your culinary adventures but also a great dish to serve as a starter on hot summer evening with a glass of beer or chilled white wine. This class will teach you various uses for them and how to create uniquely exquisite dishes that will impress your family and friends.
