Kristeva's Favourite Xmas Candy - Chocolate Butter Toffee

This recipe is from the Land O’Lakes Country Treasure Cookbook. It was given to me by one of my mother’s friends as a wedding present. I’ve adored and been inspired by many of their delicious recipes and mouthwatering photos. The only thing I can add to this recipe is the “snob-factor trumpmanship” of the likes of “grass-fed butter” and “somebody-or-other-fancy-ass” chocolate. Otherwise, any butter and chocolate chips will do!

One caveat of warning. Do not be left alone with these once they are done … And, if you are left alone with these do not reach for even one - they are like crack. One is one too many: one more is never enough.

Ingredients

1 C sugar

1 C butter

6 oz package chocolate chips

Crushed nuts optional

Directions

Step 1

  • Bring sugar and butter to a boil. Hold at a hard boil until the candy thermometer reaches 300F (149 C). Stirring constantly.

Step 2

  • Spread onto parchment lined cookie sheet

  • Drop chocolate chips (or your fancy-ass-somebody;famous-chocolate broken into pieces)

  • Spread the melting chocolate with a spatula over the candy (then sprinkle nuts if desired) and then let it cool

Step 3

  • Break into pieces and store in airtight container

  • Place container in a safe with a 24 hour timing lock on it
