FIELD TO FEAST:
The course is a fun morning exploring the wild foods of the region surrounding Dirty Bear Ranch. We start with an informative talk over a wild harvested tea before heading out in the field where we will identify various wild edibles while on the hunt for Alberta Wild Rose.
If you ever wondered how to use fresh or dried rose petals in cooking and baking this course is for you. Roses are a staple herb and flavouring in various ethnic cuisines around the world and yet little known in North America. This class will teach you various uses for them and how to create uniquely exquisite dishes that will impress your family and friends.
You will learn how to make a chilled yoghurt and cucumber soup with rose petals, herbs, raisins and chopped walnuts. This soup is a great dish to serve as a starter on hot summer days. You can decorate the soup with crushed dried mint and rose petals in beautiful patterns. Sometimes it’ll look too good to eat!
DETAILS
NOTE: Come dressed for the weather with a good pair of walking shoes. Rain gear may be necessary.
Fee includes: morning tea, recipe booklet to take home, a herb walk with time for collecting rose petals, and finishing off the class with an English style “high tea” with soup & finger foods made with wild roses, and a glass of the house special Cracklin’ Rosie mead (honey wine).
CANCELLATION POLICY: If you need to cancel your booking you must do so no less than 14 days prior to the date of your class in order to receive a refund. Cancellations within 2 weeks of a class will not be refunded or rescheduled.
